
1 lb. beef skirt steak
1 recipe dry rub mix (recipe follows)
2 red or yellow bell peppers, halved and seeded
4 hamburger buns or rustic buns
1/2 lb. fontina cheese
4 slices vidalia onion
1. Thoroughly coat both sides of skirt steak with dry rub mix. Tightly wrap in plastic wrap or a ziploc bag and refrigerate for 12-24 hrs.
2. Preheat grill and coat with oil.
3. Grill steak and peppers until medium rare, about 5-8 minutes each side.
4. Remove and let rest covered for 10 minutes.
5. Preheat broiler.
6. Slice steak thinly and place on bun then top with fontina cheese.
7. Broil the bun with cheese and steak and the plain bun until cheese melts and plain side of bun is golden.
8. Top with peppers and onion, if desired
Dry Rub:
1 tsp. each-
ground cumin, ground coriander, ground black pepper, onion powder and garlic powder
1 Tbsp. brown sugar
1-1/2 tsp. salt
1/4 tsp. cayenne pepper
I like to triple this so I have it on hand to make the sandwiches again!
