The Best Pizza Ever!






I make this every Friday night for pizza and movie night. It's the best! Make the sauce ahead of time so it can cool while you're making the crust.



Dough:

1-1/3 cups warm water (10.66 oz.)
2 Tbsp. olive oil (28 grams)
2 tsp. sugar
1-1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. onion powder
2 tbsp. cornmeal (18 grams)
2 cups all-purpose flour (250 grams)
2 cups bread flour (250 grams)
1 tsp. baking powder
1-1/2 tsp. instant yeast

You can either put all of the ingredients in the Kitchen Aid or the bread machine. If you use the Kitchen Aid use the dough hook and let it knead for 5 minutes only then grease the bowl and cover to let the dough rise for 1/2 hour or so. Shape dough into a 14-16" circle and place on a deep dish pizza pan that has been coated with a mixture of 3 Tbsp. melted butter and 2 Tbsp. olive oil. Brush some of the oil mixture onto the outer rim of crust.

Sauce:

4 cloves of garlic, minced
1 Tbsp. olive oil
1 14 oz. can tomato sauce
3 6 oz. cans tomato paste
2 tsp. salt
1 tsp. sugar
1 tsp. Italian herbs
2 shakes red pepper flakes

Saute garlic in olive oil until fragrant. Carefully stir in remaining ingredients and simmer for 1/2 hour. Let cool to warm before placing on crust. This makes enough for 2-3 pizzas.

To assemble pizzas, top with sauce and your favorite toppings. Bake in a pre-heated 425 degree oven for 18-22 minutes. Make sure to bake in in the lower 1/3 of your oven and but not all the way on the bottom.
