Apple Muffins


1-3/4 cups all-purpose(white) or whole wheat flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1 small apple, seeded and chopped (1/2 cup)
1 egg
3/4 cup milk
1/4 cup canola oil
1/4 cup apple butter
Streusel topping (recipe follows)

Preheat oven to 400 degrees.Prepare either 12 standard muffin cups or 24 mini-muffin cups with cooking spray or muffin cup liners.

Sift together flour, sugar, baking powder and salt in a medium bowl. Set aside.

In a small bowl beat egg then add milk, oil and apple butter. Mix well then add to flour mixture. Stir until dry ingredients are wet then stir in chopped apple. The batter will be somewhat lumpy.

Fill muffin cups almost to the top with batter and sprinkle evenly with streusel mixture.

Bake 14 minutes for mini muffins @ 375 degrees or 20 minutes @ 400 degrees for standard muffins.


Streusel Topping mix together:

3 Tbs. flour
3 Tbs. brown sugar
1/4 tsp. cinnamon
2 Tbs. softened butter

Those look really yummy! I wish my kitchen was clean so I could make them. Maybe it'll light a fire under my...um...backside.

WHEAT FLOUR!?!? Can I substitute white?
