Ham and Cheddar Muffins





These are great on-the-go muffins! I eat them almost every morning for breakfast:)

1 3/4 cup whole wheat flour
2 Tbsp brown sugar
2 tsp baking powder
3/4 tsp sea salt
1 1/2 cup shredded low fat cheddar
3/4 cup chopped ham
1 egg, lightly beaten
1 cup skim milk
2 tbsp applesauce

Preheat oven to 400 degrees. Place paper cups in muffin tin.
In a large bowl combine flour, brown sugar, baking powder and salt. Stir in cheddar and ham.
In a separate small bowl combine egg, milk and applesauce, mix well.
Pour liquid ingredients into dry and stir until moistened. Pour batter into muffin cups to the top.
Bake for 17-20 minutes. Remove muffins from muffin pan right away and cool on a wire rack.

Hmmmmm Cheese my favorite.....well Brett would like them. Could you do Bacon? Then he'd really LIKE then :)

Yeah, you could totally use bacon. You could also use white flour, regular cheese and milk as well as oil instead of applesauce. I bet they would be really yummy:)

I'm torn on these. They look really good but I'm not a ham...or bacon fan:) Maybe I could just make cheese muffins. I bet that would be yummy!

The recipe actually calls for St. Yves Meatless Ham. I am not a "meatless" ham kinda girl so I added the real thing. You could use the SYves for sure or just cheese:)
