Chocolate Zucchini Cake



Ingredients

* 1 cup brown sugar
* ½ cup butter
* ½ cup white sugar
* ½ cup oil
* 3 eggs
* 1 tsp vanilla
* 1 cup buttermilk (milk with 1 tsp. vinegar will work)
* 2 1/2 cup flour
* 1 tsp cinnamon
* 2 tsp soda
* 4 tbsp cocoa
* 2 cups unpeeled, grated zucchini

Instructions

1. In a very large bowl, cream together the brown sugar, butter, white sugar, and oil.
2. Stir in the eggs, vanilla, and buttermilk.
3. Add the flour, cinnamon, soda, cocoa, and zucchini. Stir until combined.
4. Grease and flour a 9x13” cake pan. Pour batter into the pan. Sprinkle ¾ cup chocolate chips on top. Bake at 325°F for 45 minutes. If the cake seems a bit too moist, turn off the oven and let cool in the oven.
5. When the cake is cool cover or seal with plastic wrap. Store in a cool dry place.

Ok so not fair....I just bought a scale and got serious about the diet...this is seriously going to drive me crazy....first pizza, & now chocolate...yum....
