In Kitchen Aid mixing bowl place:
1-1/4 cups Bob's Red Mill 7-Grain Hot Cereal Mix
2-1/2 cups boiling water
Stir well and let sit for 1 hour until 110 degrees.
Add and stir well:
1/4 honey
1/4 cup melted butter
2-1/2 tsp. instant yeast
Next combine:
215 grams whole wheat flour (about 1-3/4 cups)
425 grams all purpose flour (about 3-1/3 cups)
Place cereal mixture on mixer with the dough hook attached. Turn onto low and slowly add flour, 1/2 cup at a time. Let knead for one-minute. Cover bowl, still attached to mixer, with plastic wrap. Let sit 20 minutes.
Uncover and add:
1 Tbsp. salt
Knead on med/ low for about 3-4 minutes until it pulls away from the sides. If it is still really sticky add 1 Tbsp. flour or so. Continue to knead for about 5 minutes more.
Remove dough from bowl. Knead into a tight ball and placed in greased bowl. Cover with plastic wrap and let rise for about an hour or until doubled.
Gently turn out onto a lightly floured or greased counter and pat into a 12 x 9 inch rectangle. Cut in half to make 2- 6" x 9" pieces. Roll each piece starting on the short end into a tight log. (Optional: Spray loaf lightly with Pam and roll into oatmeal or sunflower seeds) Place in 2 greased bread pans and let rise 35-45 minutes. Bake @ 375 degrees for 35-40 minutes. Turn halfway during baking front to back. Let cool for 10-minutes on the pan then transfer to cooling racks and allow to cool for 3 full hours.
~You can add 3/4 cup sunflower or pumpkin seeds at the end of the second knead. Knead in with hook for about 15-seconds.~
