
Sorry, I forgot this on Tuesday:)
4 boneless, skinless chicken breasts
1/2 each red and green bell pepper, cut in half then sliced
2 Tbsp. oil
3 Tbsp. fajita seasoning mix, or to taste (recipe follows)
3 Tbsp. water
1 medium onion, cut in half then sliced
Fajita Fixins'(cheese, sour cream, salsa....)
Cut chicken into thin strips. Heat oil in a large skillet and add chicken. Cook and stir over medium-high heat for 5 minutes. Add the seasoning mix, water, green pepper and onion. Cook on medium for about 5 more minutes or until chicken is cooked through and vegetables are just starting to get tender. Serve with fixins'. Enjoy!
Fajita Seasoning Mix
3 Tbsp. cornstarch
2 Tbsp. chili powder
1Tbsp. salt
1 Tbsp. paprika
1Tbsp. sugar
2-1/2 tsp. crushed chicken boullion cube
1-1/2 tsp. onion powder
1-1/2 tsp garlic powder
1/2 tsp. cayenne pepper
1/2 tsp. crushed red pepper
1/2 tsp. cumin
Combine all ingredients in a small bowl. Pour into a plastic tupperware ar ziploc baggie and store for up to 3 months.

Sounds yummy! Would have never guessed to use chicken boullion, will have to try!
Thanks Cole for another great recipe, I don't like most packaged fajita mixes, this sounds yummy!
